Chocolate Chips Oatmeal Cookies

Ingredients:
- 3/4 cup shortening
- 1 cup palm sugar
- 1 large egg
- 1 tsp vanilla
- 3/4 cup all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 3 cups oats
- 1 cup chocolate chips

Directions:
1. Preheat oven to 350 degrees
2. Line baking sheets with parchment paper
3. The the bowl of electric mixer (or with a hand mixer), cream the shortening and sugar until creamy and smooth (about 2 - 3 minutes).
4. Add the egg and vanilla and beat to combine.
5. In separate bowl, whisk together the flour, baking soda, salt and ground cinnamon.
6. Add the flour mixture to the creamed mixture and beat until combined. Stir in chocolate chips.
7. Bake the cookies for about 12 - 15 minutes, or until golden brown around the edges but still soft in the centers.
8. Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool.
